We love eating the fresh wholesome vegetables that we grow for our families and as we share our produce with AMEN La Grange, we also offer some of our favorite vegetable and fresh fruit recipes. 


Mixed Vegetable Bake (photo above)


Ingredients:

1 Turnip

1 Carrot

1 Onion

1 Bell Pepper

3 TBSP Olive Oil

1 Tsp Salt


Note: The wonderful thing about this recipe is its flexibility for alternate ingredients. We often make this with Turnips only. Once baked and lightly caramelized they almost taste like candy. Other vegetables that work well in the mix are: Cauliflower, Beet, Potato, Sweet Potato, Summer Squash, Winter Squash, Radish, Garlic, and Parsnip. So pick 1 to 4 favorites that you have on hand and give it a try; the variations are almost limitless. 


Directions:

Preheat Oven to 450 F

Wash and peel enough of the selected Vegetables to cover a cookie sheet. 

Chop the Vegetables into approximately 1 inch cube pieces: Cutting harder root veggies like carrot or turnip into slightly smaller pieces will help all be baked  evenly to an enjoyable tenderness.

Place all chopped veggies in a large mixing bowl and add olive oil. Hand mix to coat all veggies with olive oil. 

Pour veggies onto a cookie sheet (lining it first with Aluminum foil or Parchment paper will help with cleanup).

 Lightly sprinkle with salt or OPTIONAL spices to add an international flare:

Cajun - Paprika, Garlic Powder, Oregano, and/or Cayenne Pepper

Mediterranean - Cumin, Turmeric, Coriander, and/or Cardamom

Mexican - Cumin, Chili Powder, Oregano, and/or ground Anise

Indian - Curry Powder, Turmeric, Cardamom, and/or Black Pepper

Bake 15 minutes, carefully remove from oven, stir turning mix over gently, return to oven for about 10 to 15 minutes. Some veggies will be lightly blackened on edges, this carmelization makes them taste almost like candy.

Serves: 4 to 6
