Heloise's Generic Cream Soup Base
Dry Ingredients: (can be mixed together and stored in airtight container for later use)
1 Cup nonfat dried milk powder or powdered soy milk
1 Tablespoon dried onion flakes
2 Tablespoons cornstarch or arrowroot powder
2 Tablespoons chicken bouillon powder
1/2 Teaspoon dried basil, crushed
1/2 Teaspoon dried thyme, crushed
1/4 Teaspoon black pepper
Vegetable Main Ingredient:
1 Cup of a main ingredient vegetable (mushrooms, mixed vegetables, cubed chicken, etc)
Alternately try with a Cup of a baked or boiled, then puréed vegetable (carrot, potato, peas,pumpkin, butternut squash, etc. )
Directions:
- Add 2 Cups of cold water to the dry ingredients in a medium saucepan and stir over medium heat until thick.
- Add the main ingredient of your choice and cook until done.
Hint: If the soup is too thick, add a little milk. If too thin add a teaspoon of instant potato flakes. Stir and adjust till it's just right.
Note: The wonderful thing about this recipe is its flexibility for alternate ingredients.
